Keto for Two: EASY Avocado Cucumber Lunch
When meal prepping for keto this week, I saved lunch for last because it was sooo easy! It literally took me MAYBE 10 minutes total from start to finish. Trust me, after meal prepping for hours, you'll appreciate your last menu item being quick and easy. Or, if you think you'd feel more accomplished having that one whole menu item for the week completed first, then knock it out. Since our breakfast and dinner this week contain so much protein, I left a main source of protein out of this lunch to keep us within the keto range. We still had plenty of room for fats and a little left for carbs, so I peeled and diced some cucumbers and avocados, then drizzled with EVOO (I use Whole Foods brand), and seasoned with some Private Selection sea salt and oregano. I'm sure freshly ground black pepper would've been nice too, but our new pepper grinder decided to break...just dandy. At least it was an inexpensive one from Kroger though and can easily be replaced! Although Christopher now thinks we need to invest in a really nice one...

While there is some pepper in the break room at my office, I literally cannot use it anymore. I found out last year that many containers of pre-ground pepper contain, well, not all pepper...but even additives like wood shavings! WHAT?! The quick trick to tell is to fill a cup or bowl with water and shake some of the pepper into it. The real pepper will float on the surface, while the majority of other ingredients sink to the bottom. You best believe I tested this method out with the pepper at work and was amazed at how LITTLE of it floated! So strange...and so not being consumed by me anymore.
Anyway, this meal really was too easy to make. The flavors work so well together and it tastes super refreshing and high quality. Although it doesn't seem like much to eat, the avocado makes it quite filling which is great! It lasted me through the last half of my work day and the gym.
